  • -40g / Grub Mealworms, crushed

  • -40g / red curry paste

  • -300ml / coconut cream

  • -100ml / vegetable stock

  • -3 tbs / mild curry powder

  • -20g / palm sugar

  • -3 tbs / fish sauce

  • -3 tbs / vegetable oil (for cooking)

Mealworm Fried Rice

 

  • 300g 'riced' cauliflower

  • 4 eggs scrambled

  • 2 cloves garlic chopped

  • 2tbsp lard

  • 25g dried mealworms

  • 3 scallions chopped

  • 2tbsp coconut aminos

  • 1-2tbsp fish sauce

  • salt and pepper to taste
